You Can Still Eat Dessert

- Butter Rum Muffins – For this low carb dessert , you will need a 1/4 th cup of tofu, 1/4 th cup of ground sesame seeds and soy flour each, 2 eggs, 3 tablespoons of sour cream, 1 tablespoon of butter, 1 tablespoon of rum, 1 ½ teaspoon of vanilla extract and a ½ teaspoon of baking powder. You begin by preheating the oven to up to 350 degrees Fahrenheit. Then add the butter into four small tins to make ovens. Add all the ingredients and blend them in the food processor for about 2 to 3 minutes. The mixture will become smooth after blending. Then pour the mixture into the tins. Bake them in the oven for up to 25 minutes. Check with a tester to assure that it comes out clean. You have to let the muffins sit in their tins for at least 10 minutes to allow them to cool partially, then remove them onto a rack where they can continue the cooling process.
